A Wisconsin Swiss cheese aged 18 to 24 months. Since this Swiss is aged longer than our medium it has more flavor and is slightly drier. It has a rich nutty flavor, and moisture that has reformed in the eyes. Add more robust flavor to any recipe that calls for swiss.Cut from 20 pound wheels, sold by the pound, weights vary.
