Aged Brick unlike the mild and medium is a surfaced ripened cheese. Aged has a full earthy flavor that is pungent and tangy.The flavor is similar to limburger yet is milder and firmer. Traditionally eaten with sweet onion on rye bread and paired with robust beers such as porter style ale, bock lagers, or hard ciders.
