Mild Brick

A Wisconsin original first made by John Jossi around 1877. Brick has a smooth open texture and a mild creamy flavor with a touch of sweetness. Goes well on sandwiches and shredded in casseroles. Pair with light red wines.  Cut from 6 pound bricks, sold by the pound, weights vary.
