Wisconsin Romano is made with part-skim cows milk, and like it’s Italian counterpart, has more fat and a sharper, more assertive flavor than Parmesan. Romano has a hard, granular texture making it perfect for grating. Use in your favorite recipes in place of Parmesan for a more piquant flavor or blend with other grating cheeses. Goes well with apples, pears tomatoes, olives, and pepperocini.
